Ingredients
6 cups freshly washed arugula
1/3 cup pine nuts
2 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
1 tablespoon honey
1 clove garlic, minced
2 cups shaved Parmesan cheese (optional)
6 cherry tomatoes, halved
1/4 cup thinly sliced red onion
Instructions
Wash and dry arugula thoroughly
Toast pine nuts in a dry skillet over medium heat for 3-5 minutes until golden
In a mixing bowl, whisk together olive oil, lemon juice, honey, and garlic
Toss arugula with half the dressing
Top with toasted pine nuts, cherry tomatoes, and red onion slices
Add shaved Parmesan cheese if using
Drizzle remaining dressing over the salad just before serving
Season with salt and pepper
