Ingredients

2 ripe avocados, diced
1 English cucumber, sliced
1 pint cherry tomatoes, halved
1/4 red onion, thinly sliced
1 jalapeño pepper, finely chopped
1 cup torn mixed greens
3 tablespoons fresh lime juice
2 tablespoons avocado oil or extra virgin olive oil
2½ teaspoons honey
1 garlic clove, grated
1 teaspoon chopped fresh cilantro


Instructions

Whisk lime juice, oil, honey, garlic, and a pinch of salt in a small bowl for the dressing.
In a large bowl, toss diced avocado, cucumber slices, cherry tomatoes, red onion, jalapeños, and mixed greens.
Drizzle the dressing over the salad and gently mix to coat.
Top with chopped cilantro before serving.

Notes

Use olive oil if avocado oil isn’t available.
