- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 4 eggs
- 3/4 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 tsp vanilla extract
- 3 cups finely grated carrots
- 1 cup chopped pecans (optional)
- 1 recipe Cream Cheese Frosting
Instructions
- Preheat oven to 350 degrees F. Butter two 9-inch round cake pans, line with parchment paper, and dust with flour.
- Mix together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Combine the wet ingredients in a large bowl: blend together the vegetable oil, applesauce, eggs, granulated sugar, brown sugar, and vanilla until smooth.
- Add the dry mixture to the wet bowl, stirring until just combined.
- Fold in the grated carrots and pecans if using.
- Fill the prepared pans evenly with batter and smooth the tops.
- Bake for 33–38 minutes or until a toothpick inserted comes out clean.
- Cool in pans for 10 minutes, then invert onto a wire rack to cool completely.
- Frost the layers with cream cheese frosting once cooled, and top with chopped pecans if desired.

Store the cake in an airtight container in the refrigerator to keep the cream cheese frosting fresh.
