Ingredients
1½ cups full-fat cottage cheese
3 large eggs
⅓ cup pure maple syrup
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
Instructions
Preheat oven to 375°F (190°C)
In a blender, combine cottage cheese, eggs, maple syrup, and vanilla extract. Blend until smooth
Stir in blueberries gently by hand
Pour mixture into a lined 8×8-inch baking dish
Bake for 25-30 minutes until golden and set
Cool slightly before slicing
Notes
Can be stored in the fridge for up to 3 days
Use flax egg (1 tbsp ground flax + 3 tbsp water) as a vegan alternative
Low-fat cottage cheese can be used, but texture will be less creamy
