Description

This fast, flavorful Butter Lettuce Salad combines tender butter lettuce with a bright homemade vinaigrette and light toppings. Ready in 15 minutes, this refreshing dish is ideal for lunch or a side. Customize with grilled chicken, nuts, or chickpeas for extra protein.


Ingredients

6 cups butter lettuce (about 12 leaves), washed and dried
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1 small shallot, finely chopped
¼ cup roasted chickpeas (optional)
¼ cup whole almonds, sliced (optional)
¼ cup dried cranberries (optional)


Instructions

In a small bowl, whisk olive oil, lemon juice, Dijon mustard, honey, and shallot to create the dressing.
Place butter lettuce in a large serving bowl. Drizzle a portion of the dressing over the lettuce and toss gently to coat.
Top with chickpeas, almonds, and cranberries if using. Add remaining dressing to taste before serving.

Notes

For best results, use fresh, crisp butter lettuce. Store dressing separately and toss just before serving.
To make it heartier, add grilled chicken, shrimp, or tofu.
Toasters provide more flavor to nuts—toast almonds in a dry pan for 1-2 minutes before adding.
Lettuce can be pre-washed and stored in a sealed container for up to 2 days.
