Description

A quick, customizable, and healthier take on a classic burrito in bowl form. Features tender chipotle-seasoned chicken, fluffy cilantro-lime rice, and vibrant toppings for a satisfying weeknight meal. Perfect for families and meal preppers.


Ingredients

2 tablespoons olive oil
3 tablespoons lime juice
3 chipotle chilis in adobo sauce
1 ½ teaspoon garlic powder
¾ teaspoon salt
1 ½ pounds chicken breast, cut into strips
1 cup long-grain white rice, rinsed
1 ½ cups water
¼ teaspoon salt for rice
1 lime (zest and juice)
¼ cup chopped cilantro
1 can black beans, rinsed and drained
1 cup frozen corn, thawed and drained
1 avocado, sliced
1 cup chopped roma tomatoes
½ cup sour cream
1 cup tortilla strips (store-bought or homemade)
¼ cup shredded cheese (optional)
1 tablespoon chopped green onions
2 cups cooked lettuce (or arugula)


Instructions

In a bowl, whisk olive oil, lime juice, chipotle chilis, garlic powder, and ½ teaspoon of salt. Add chicken strips and marinate for 15 minutes.
In a saucepan, combine rice, water, remaining salt (¼ tsp), lime zest, and ½ lime juice. Bring to a boil, then simmer covered for 18-20 minutes until water is absorbed.
Heat a skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes until golden and cooked through, then set aside.
In a separate pan, gently heat black beans and corn (with their own water) until warmed through.
To assemble, layer cilantro-lime rice in bowls. Top with chipotle chicken, black beans, corn, sliced avocado, chopped tomatoes, sour cream, shredded cheese, green onions, and tortilla strips. Serve with remaining lime wedges.

Notes

Use pre-cooked rice for quicker prep. Substitute Greek yogurt for sour cream for a vegan alternative. For extra flavor, warm tortilla strips in a dry skillet before adding to the bowl. Adjust chipotle quantity to control heat. Leftovers can be stored for 3-4 days.
