Description

Ingredients
2 medium cucumbers, peeled and julienned
1 cup radishes, thinly sliced
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 teaspoon honey or maple syrup
1 clove garlic, minced
1/2 teaspoon chili flakes (optional)
Salt and black pepper to taste
Instructions
Prepare cucumbers and radishes by slicing into matchsticks
In a large bowl, add julienned cucumbers and radishes
In a small bowl, whisk lemon juice, olive oil, honey/maple syrup, garlic, chili flakes, salt, and pepper
Pour dressing over vegetables and toss to combine
Let marinate for 10-15 minutes before serving
Notes
For best flavor, salt cucumbers for 5 minutes, drain, then add to salad
Store in airtight container in refrigerator for up to 24 hours
Pair with grilled chicken, fish, or quinoa bowls
For vegan version, use maple syrup instead of honey
