Ingredients
3 (15.25-ounce) cans corn, drained
2 tablespoons butter
Kosher salt
3 tablespoons mayonnaise
1 cup shredded cotija cheese
2 tablespoons lime juice
1 teaspoon chili powder
1 fresh chili pepper (or 1/2 canned), finely chopped
Instructions
Heat a large skillet over medium-high heat and add butter
Add drained corn to skillet, season with salt, and cook for 8-10 minutes until corn begins to brown and develop a fund
Remove corn from pan and set aside
