Description

A smoky, creamy stovetop Mexican street corn recipe with charred grilled texture. Made with canned corn for quick preparation, blended with butter, mayonnaise, cheese, lime, and chili for authentic street food flavor.

Ingredients

Scale

3 (15.25-ounce) cans corn, drained
2 tablespoons butter
Kosher salt
3 tablespoons mayonnaise
1 cup shredded cotija cheese
2 tablespoons lime juice
1 teaspoon chili powder
1 fresh chili pepper (or 1/2 canned), finely chopped

Instructions

Heat a large skillet over medium-high heat and add butter
Add drained corn to skillet, season with salt, and cook for 8-10 minutes until corn begins to brown and develop a fund
Remove corn from pan and set aside
In a large bowl, mix mayonnaise, lime juice, chili powder, and chili pepper
Stir in warm corn and shredded cotija cheese until evenly coated
Serve immediately or chill slightly for a thickened sauce

Notes

Chill mixture for 15 minutes before serving for a cooler, creamier texture
Substitute cotija cheese with Mexican queso fresco or feta if unavailable
Add optional toppings like cilantro, scallions, or hot sauce just before serving
Refrigerate leftovers in an airtight container for up to 3 days
