Description

A fun and festive dessert combining a buttery cookie crust with a creamy topping and fresh fruits, perfect for summer celebrations.


Ingredients

  • 1 1/2 cups (188 grams) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113 grams) unsalted butter, softened
  • 3/4 cup (150 grams) granulated sugar
  • 2 teaspoons lemon zest
  • 1 1/2 teaspoons lemon extract
  • 1 large egg (50 grams)
  • 8 oz (225 grams) cream cheese, room temperature
  • 1 1/3 cups (160 grams) powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup (80 ml) heavy cream, cold
  • 1 pound (453 grams) strawberries
  • 6 oz (170 grams) blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a pizza pan.
  2. Mix the flour, baking powder, and salt in a bowl.
  3. Cream the butter and sugar until light and fluffy.
  4. Add in the lemon zest, lemon extract, and egg; mix well.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Spread the dough onto the prepared pizza pan, shaping into a pizza about 1/2 inch thick.
  7. Bake for 10-12 minutes or until lightly golden, then let it cool completely.
  8. Combine the cream cheese, powdered sugar, vanilla extract, and pinch of salt in a bowl; beat until smooth.
  9. Whip the cold heavy cream until it forms soft peaks, then gently fold it into the cream cheese mixture.
  10. Spread the cream cheese topping over the cooled crust and arrange the strawberries and blueberries on top.
