Ingredients
4 cups fresh cherry tomatoes, chopped
1 small red onion, finely chopped
1 jalapeño pepper, seeded and diced
½ cup fresh cilantro leaves, chopped
Juice of 2 limes
Instructions
Chop tomatoes into small dice
Finely chop red onion
Dice jalapeño (remove seeds for milder heat)
Add all ingredients to a bowl
Chop cilantro and fold into mixture
Squeeze in lime juice and gently stir
Season with salt to taste
Let rest 15-20 minutes for flavors to meld
Notes
Allow salsa to rest 30 minutes before serving for optimal flavor
Store airtight in fridge for 2-3 days
Add diced avocado for creaminess, or red bell pepper for color
