Description
A vibrant 15-minute herb salad bursting with fresh herbs, crunchy toasted seeds, and a bright lemon-olive oil dressing. Perfect as a quick side dish with contrasting textures and refreshing flavors.
Ingredients
1 medium head lettuce, torn
Mixed fresh herbs (mint, basil, parsley, cilantro, dill)
1/4 cup pumpkin seeds
1/4 cup sliced almonds
1 tablespoon sesame seeds
1/2 teaspoon red pepper flakes
1 teaspoon nigella seeds (optional)
1/4 cup extra virgin olive oil
2 tablespoons fresh lemon juice
Instructions
Tear lettuce into a large salad bowl
Chop herbs finely and add to bowl
In a skillet, toast pumpkin seeds, almonds, and sesame seeds over medium heat 2-3 minutes until fragrant
Add toasted seeds and nuts to the salad
Toss in red pepper flakes and nigella seeds (if using)
In small bowl, whisk olive oil and lemon juice to make dressing
Pour dressing over salad and toss to combine
Adjust seasoning with salt and freshly ground black pepper
Notes
Toast seeds/nuts carefully to avoid burning
Add fresh citrus zest for extra brightness
Store un-toasted seeds in airtight container for 3-4 days
Customize with apple slices, citrus segments, or dried fruit
