Ingredients

1 tbsp chili powder
1/2 tbsp paprika
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp ground cumin
1/8 tsp black pepper
1 1/2 lbs skinless chicken breast, cut into strips
1 red onion, sliced
2 bell peppers (1 red, 1 green), sliced
2 tbsp olive oil
1/4 cup fresh lime juice
1/2 tsp salt
1/4 tsp black pepper (to taste)


Instructions

Preheat oven to 400°F (200°C)
In a small bowl, mix chili powder, paprika, onion powder, garlic powder, cumin, and black pepper to create fajita seasoning
Place chicken and vegetables on a large baking sheet
In a large bowl, combine chicken, onions, and peppers with olive oil, lime juice, 1/2 tsp salt, and 1/4 tsp black pepper
Evenly coat mixture with homemade fajita seasoning and toss to blend
Transfer to prepared baking sheet, arranging in a single layer
Bake for 20 minutes, then flip chicken and vegetables
Bake 5-10 minutes more until chicken reaches 165°F and vegetables are tender

Notes
