Ingredients
4 mini or Persian cucumbers
8 small radishes
1/4 cup finely chopped fresh dill
2 tablespoons lemon juice
1 tablespoon olive oil
1 teaspoon honey
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Instructions
Wash and pat dry 4 cucumbers and 8 radishes
Thinly slice cucumbers and radishes using a knife or mandoline
In a bowl, whisk together dill, lemon juice, olive oil, honey, salt, and pepper
Add sliced vegetables to the dressing; toss gently
Cover and refrigerate for 5–10 minutes to let flavors meld
