Ingredients
2 lbs asparagus spears
1 lemon
4 Tbsp unsalted butter
1 Tbsp olive oil
1 tsp sea salt
1/2 tsp black pepper, freshly ground
1/2 cup shredded parmesan cheese
Instructions
Preheat oven to 400°F (200°C)
Toss asparagus with olive oil, sea salt, and black pepper on a large baking sheet
Roast for 12-15 minutes until tender and golden. Transfer to a serving dish
In a small saucepan, melt butter, then add juice from 1 lemon and parmesan cheese. Cook until thickened, 2-3 minutes
Drizzle lemon-butter mixture over warm asparagus and serve immediately
Notes
Trim woody ends by snapping or cutting before roasting
For even cooking, choose asparagus with similar thickness
Serve with a squeeze of fresh lemon
Store leftovers in an airtight container in the fridge for up to 3 days
For a vegan version, use vegan parmesan and substitute butter with melted vegan margarine
