Description

A colorful and delightful dish packed with flavor, perfect for parties and gatherings, featuring fresh vegetables, beans, and a zesty dressing.


Ingredients

  • 2 diced bell peppers (red, yellow, or orange; green optional)
  • 1/2 large red onion (diced)
  • 2 medium cucumbers (diced)
  • 15 cherry tomatoes (sliced)
  • 2 red or green jalapeños (diced; seeds removed for less heat)
  • 4 ears of corn (cut off the cob)
  • 1 large handful of fresh cilantro (chopped)
  • 1 can chickpeas (drained and rinsed)
  • 1 can black beans (drained and rinsed)
  • 1 cup feta cheese
  • 2 large limes (juiced)
  • 1/4 cup olive oil
  • 2 tsp pink salt or sea salt
  • 1 tsp black pepper
  • 2 tbsp apple cider vinegar
  • 2 tsp honey

Instructions

  1. Dice the bell peppers into small chunks and put them in a large bowl.
  2. Dice the cucumbers and red onion, then add them to the bowl.
  3. Slice the cherry tomatoes into small pieces and add them to the bowl.
  4. Dice the jalapeños into small chunks and add them to the bowl.
  5. Cut the corn off of the cob and add it to the mix.
  6. Chop the cilantro well and add it to the bowl.
  7. Drain and rinse the chickpeas and black beans before adding them in.
  8. Add in feta cheese.
  9. Whisk together lime juice, olive oil, pink salt, black pepper, apple cider vinegar, and honey in a separate bowl.
  10. Pour this dressing over the vegetable and bean mixture in the large bowl. Mix everything together gently until well combined.

Notes

Serve as a dip or salad. Best enjoyed fresh but can be stored for up to 3 days.
