Description

Ingredients

6 cups spring mix (bagged or fresh)
1/4 cup sunflower seeds
4 oz goat cheese crumbles
1 medium cucumber, sliced
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon honey
1 teaspoon Dijon mustard
Pinch of salt
Pinch of black pepper


Instructions

Toss spring mix, sunflower seeds, and cucumber slices in a large bowl
Crumble goat cheese over the salad
In a small jar, combine balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper
Shake dressing jar until emulsified
Drizzle dressing over salad and toss gently
