Ingredients

1/2 cup beef taco seasoning (no pork/alcohol)
1 cup uncooked white rice
1 1/2 cups water
1 (15-oz) can black beans, rinsed and drained
1/2 cup salsa
1/4 cup shredded cheddar cheese (optional)
1/4 cup diced red onion
1/2 cup chopped lettuce
1/4 avocado, diced
1/2 cup diced fresh tomatoes
1/4 cup chopped fresh cilantro
1 lime, cut into wedges


Instructions

Cook rice by boiling water, adding rice, and simmering for 18 minutes.
Brown ground beef in a skillet over medium heat until no pink remains.
Stir in taco seasoning and 1/4 cup water, simmer for 2-3 minutes.
Assemble bowls with rice, seasoned beef, black beans, salsa, and toppings.
Add cheese, avocado, onion, tomatoes, and cilantro before serving with lime wedges.
