Ingredients
1/2 English cucumber, chopped
3 cups cherry tomatoes, halved
8 oz fresh mozzarella pearls
1 ripe avocado, sliced
2 tbsp olive oil
1 tbsp balsamic vinegar
1 clove garlic, minced
1 tsp honey
fresh basil or oregano, chopped (optional)
salt and pepper to taste
Instructions
Chop the English cucumber into 1/4-inch pieces.
Halve cherry tomatoes and slice avocado.
In a bowl, combine mozzarella pearls, cucumber, tomatoes, and avocado.
In a small bowl, whisk olive oil, balsamic vinegar, garlic, honey, salt, and pepper to make the vinaigrette.
