Ingredients
8 to 10 cups watermelon, cut into 1 ½-inch cubes
1 to 2 limes, juiced (about ¼ cup)
3 tablespoons fresh mint, finely minced
Instructions
Cut the watermelon into 1½-inch cubes using a sharp knife and cutting board.
Finely mince the fresh mint leaves using a sharp knife or a microplane.
In a large mixing bowl, gently toss the watermelon cubes with lime juice until evenly coated.
Fold in the minced fresh mint leaves, being careful not to crush the watermelon.
Give it a taste and adjust lime juice or mint as needed.
Chill the salad in the refrigerator for at least 10 minutes before serving to let the flavors meld.
Serve cold and enjoy immediately.
Notes
Always use fresh mint for the best flavor; dried mint won’t work.
Choose a ripe, sweet watermelon for the best results—look for one with a firm texture and a creamy yellow spot.
If limes are too tart for your taste, lemon juice can be used as a substitute for a slightly different citrus note.
