Description

Delightful and refreshing skewers bringing together the bright flavors of lemon with fragrant herbs, perfect for outdoor gatherings.


Ingredients

Scale
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 23 garlic cloves (crushed)
  • 2 tsp fresh thyme
  • 2 tsp rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 4 large chicken breasts (skinless, boneless)
  • Wooden skewers (soaked in boiling water for 30 minutes)

Instructions

  1. Combine all the ingredients for the marinade in a bowl.
  2. Slice the chicken into bite-sized chunks and place them in a bowl.
  3. Pour over the marinade, cover, and refrigerate for at least 30 minutes, or up to 24 hours.
  4. Thread the marinated chicken onto the soaked wooden skewers or metal skewers.
  5. Heat an outdoor grill or stovetop grill pan.
  6. Cook the skewers, turning every 3-5 minutes, until the chicken is cooked through and golden brown on all sides.
  7. Remove from the grill and let them rest for 5 minutes before serving.

Notes

Garnish with fresh herbs or lemon wedges. Can be paired with salads, rice, or grilled vegetables.
