Description
Delightful honey garlic chicken skewers marinated and grilled to perfection.
Ingredients
Scale
- 1 tbsp avocado oil
- 1 tbsp sesame oil
- 2 cloves garlic, peeled and minced
- 1 tsp minced ginger
- 3 tbsp dark soy sauce
- 3 tbsp honey
- 2 chicken breasts (approx 350g), chopped into bite-sized pieces
- 1 red bell pepper, chopped into large chunks
- 1 onion, peeled and sliced into squares
- 1 tbsp sesame seeds
- Small bunch of coriander, roughly torn
Instructions
- Mix all the marinade ingredients together in a small bowl.
- Place the chicken in a bowl and pour on three-quarters of the marinade. Save the rest for brushing during cooking. Cover and refrigerate for 1 hour (or up to a day).
- Soak wooden skewers in water for 30 minutes to prevent burning, or use metal skewers.
- When ready to cook, heat your BBQ or griddle until very hot.
- Thread a piece of chicken onto a skewer, followed by a chunk of red pepper, then another piece of chicken and a slice of onion. Repeat until all skewers are filled.
- Place the skewers on the BBQ or griddle, cooking for 8-10 minutes until cooked through, turning 3-4 times. Brush with reserved marinade halfway through cooking.
- Check the chicken for doneness by slicing open the largest piece; ensure there is no pink in the middle.
- Sprinkle with sesame seeds and coriander, then serve hot with salad and rice or potatoes.
Notes
For extra flavor, marinate the chicken longer, even overnight. Customize with other vegetables like zucchini or mushrooms.
